Ingredients

  • 1 whole chicken, 4–5 lb
  • 3 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 lemon, halved
  • 1 onion, quartered
  • 4 carrots, cut into chunks
  • 3 celery stalks, cut into chunks
  • 1 cup chicken broth
  • 2 tbsp butter
  • 1 tsp Dijon mustard

Method

  1. Preheat your oven to 425°F and pat your chicken completely dry with paper towels—this ensures maximum crispiness on the skin. Position your oven rack in the center so the roasted whole chicken cooks evenly without burning.
  2. Combine olive oil, salt, pepper, garlic powder, paprika, thyme, and rosemary in a small bowl, then rub this mixture all over the chicken's exterior and cavity. Stuff the cavity with lemon halves and the quartered onion for aromatic flavor throughout.
  3. Arrange carrots and celery chunks in your roasting pan, creating a bed that keeps the bird elevated above drippings. Pour the chicken broth into the bottom of the pan, then place your cozy roasted whole chicken recipe centerpiece on top of the vegetables.
  4. Roast at 425°F for 15 minutes until the skin begins turning golden, then reduce heat to 375°F and continue roasting for 50-60 minutes. The thigh should reach 165°F on a meat thermometer, and juices should run clear when pierced.
  5. During the final 15 minutes, brush the skin with butter mixed with Dijon mustard for a glossy, restaurant-quality finish. Let the roasted chicken rest for 10 minutes before carving to keep all the juices locked inside.
  6. Transfer the bird to a cutting board and serve with the caramelized roasted vegetables from the pan. Drizzle pan juices over everything for extra moisture and incredible depth of flavor.
