  • 3 tbsp olive oil, divided for different cooking stages
  • 4 cloves garlic, minced finely
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 cup heavy cream, brought to room temperature
  • 2 cups fresh spinach, roughly chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, torn by hand
  • 1/2 cup vegetable broth
  • 2 tbsp butter
  • 1/4 cup parmesan cheese, grated fresh

Method
 

  1. Cook pasta according to package directions until al dente, approximately 8-10 minutes. Reserve 1 cup pasta water before draining—this starchy liquid will help bind the creamy sauce perfectly. Set cooked pasta aside in a colander.
  2. Heat 2 tbsp olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30-45 seconds until fragrant but not browned, stirring constantly to prevent burning.
  3. Add diced tomatoes with juice, vegetable broth, sun-dried tomatoes, and Italian seasoning to the skillet. Simmer for 8-10 minutes, allowing flavors to meld and the sauce to reduce slightly and concentrate beautifully.
  4. Reduce heat to low and add crumbled feta cheese directly to the simmering sauce. Stir gently for 2-3 minutes as the feta begins melting and creating creamy hearty roasted feta pasta's signature silky texture. Add reserved pasta water slowly while stirring.
