Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups diced potatoes
  • 2 cups diced bell peppers
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cups fresh spinach
  • 1/4 cup fresh parsley, chopped

Method

  1. Heat olive oil in a large cast-iron or stainless steel skillet over medium-high heat. Once shimmering, add the diced chicken breast and cook for 5-6 minutes until golden on the edges, stirring occasionally.
  2. Add chopped onion to the pan and sauté for 2-3 minutes until softened and fragrant. The onion creates a sweet base that grounds your entire cozy weeknight skillet recipe.
  3. Stir in minced garlic and cook for 30 seconds until the aroma fills your kitchen. Add diced potatoes and bell peppers, cooking for another 2 minutes while stirring to coat everything in oil.
  4. Pour chicken broth and diced tomatoes into the skillet, scraping up any browned bits from the bottom. Season with dried thyme, paprika, salt, and black pepper, then bring to a simmer.
  5. Reduce heat to medium and cover with a lid, simmering for 12-15 minutes until potatoes are fork-tender. The it should smell absolutely incredible at this point.
  6. Remove the lid and stir in fresh spinach, cooking for 1-2 minutes until wilted completely. Taste and adjust seasoning as needed before serving.
  7. Garnish generously with fresh chopped parsley and serve directly from the skillet for that heartwarming family night presentation everyone loves.
