Ingredients

  • 4 lb beef ribs
  • 3 tbsp smoked paprika
  • 2 tbsp brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp black pepper
  • 2 tsp salt
  • 1 tsp cayenne pepper
  • 1/2 cup BBQ sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • 1 tbsp mustard powder
  • 1 tsp liquid smoke
  • Fresh rosemary sprigs

Method

  1. Remove beef ribs from the cooler about 20 minutes before grilling to bring them closer to room temperature. Pat them completely dry with paper towels—this step is crucial because moisture prevents the rub from sticking and the exterior from browning properly.
  2. Combine smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, cayenne, and mustard powder in a small bowl. Mix thoroughly, then rub this seasoning generously over both sides of the ribs, pressing gently so it adheres. Set prepared ribs aside while you prepare the grill.
  3. Preheat your grill to medium-high heat, roughly 375–400°F, and oil the grates well. Whisk together BBQ sauce, apple cider vinegar, Worcestershire sauce, olive oil, liquid smoke, and a pinch of salt in a small bowl for your basting mixture.
  4. Place ribs directly on grates and grill for 35–40 minutes, turning every 8–10 minutes to ensure even cooking and prevent flare-ups. Your smoky tailgate grilled BBQ beef ribs recipe will develop a beautiful caramelized exterior at this stage. The meat should pull back from bones by about half an inch when ready.
  5. Brush ribs generously with the basting mixture on both sides and return to grill for 15 minutes, basting and rotating every 3–4 minutes. This creates multiple glaze layers and builds incredible flavor depth throughout.
  6. Add fresh rosemary sprigs directly to hot grill grates—they'll smoke gently and infuse the final flavor. Baste once more with remaining mixture, then cook for 8–10 final minutes until the glaze is sticky and caramelized.
  7. Remove from heat and let rest for 5 minutes before slicing between bones. The residual heat continues cooking interiors while allowing juices to redistribute throughout the meat.
