  • 3 tbsp olive oil
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme
  • 2 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tsp cumin
  • Lemon slices for serving

Method
 

  1. Preheat your grill to medium-high heat (around 400°F). Brush the grates generously with olive oil using a folded paper towel. Let the grill heat for at least 5 minutes so the grates are properly oiled and ready.
  2. While the grill heats, pat your tilapia fillets completely dry with paper towels. Moisture on the fish surface prevents proper browning and creates steam instead of char.
  3. Combine smoked paprika, garlic powder, onion powder, black pepper, sea salt, cumin, and minced garlic in a small bowl. Mix thoroughly to distribute all spices evenly throughout the blend.
  4. Brush both sides of each tilapia fillet with olive oil, then generously coat with your spice mixture. Reserve a tiny pinch of the seasoning blend for garnish if desired.
