  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons ice water
  • 8 ounces cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tablespoon honey
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon orange zest

Method
 

  1. Mix together flour, sugar, and a pinch of salt in a bowl. Cut in the cold butter using your fingers until the mixture looks like coarse breadcrumbs. Add the egg and ice water a little at a time, mixing gently until the dough just comes together—don't overwork it.
  2. Press the dough into a 9-inch tart pan with a removable bottom, making sure it covers the sides evenly. Prick the bottom with a fork so it doesn't puff up. Chill for at least 15 minutes while you preheat the oven to 375°F.
  3. Bake the crust for 12-15 minutes until it's light golden and set. The edges should look slightly darker. Let it cool completely on a wire rack—this step matters because a warm crust absorbs too much moisture from the filling.
  4. Beat the softened cream cheese in a bowl until fluffy (about 2 minutes). Pour in the heavy whipping cream, powdered sugar, honey, and orange zest. Whisk together until you get stiff peaks—I personally go about 3-4 minutes by hand.
  5. Spread the filling evenly into the cooled crust, smoothing the top with a spatula. Toss the berries gently with lemon juice in a separate bowl, then arrange them on top in red-white-blue stripes or your own patriotic pattern.
