  • 1 tbsp red sanding sugar
  • 1/4 tsp fine sea salt
  • 1 tsp light corn syrup
  • 1/2 tsp coconut oil
  • 1 tbsp white sanding sugar
  • 1/4 tsp lemon juice

Method
 

  1. Wash your strawberries and pat them completely dry with paper towels. Moisture is the enemy here—any water drops will make your chocolate seize up and get lumpy. I learned this the hard way after my first batch looked terrible, so don't skip this step.
  2. Line a baking sheet with parchment paper and set it nearby. You'll need somewhere to place your dipped strawberries while the chocolate sets. Trust me on having everything prepped before you start melting.
  3. Combine the dark chocolate chips, vegetable oil, and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each one, until completely smooth. This usually takes about 90 seconds total, but don't rush it or you'll burn the chocolate.
  4. Stir in the vanilla extract, light corn syrup, and lemon juice into your melted chocolate. These additions make the coating silky and add that cozy warmth that makes homemade dipped strawberries taste so much better. The corn syrup creates that glossy finish you see on fancy bakery versions.
  5. Grab a strawberry by the green leaves and dip it into the chocolate, coating most of the berry. Hold it over the bowl for a second so excess chocolate drips off. I always leave the very tip showing red because it looks prettier and gives you something to hold.
  6. Place your dipped strawberry on the parchment paper. While the chocolate is still wet, sprinkle with red or white sanding sugar and a tiny pinch of sea salt. Do this immediately because once the chocolate sets, the sugar won't stick.
