  • 2 lb ground beef
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups diced potatoes
  • 2 cups diced carrots
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cups diced bell peppers
  • 1 cup mushrooms, sliced
  • 2 tbsp tomato paste

Method
 

  1. Heat olive oil in a large skillet over medium-high heat for 1 minute until shimmering. Add ground beef and cook for 6-8 minutes, breaking it into small pieces while browning. Drain excess fat if needed, then transfer to a plate.
  2. Return the skillet to medium heat and add diced onion, cooking for 3 minutes until softened and fragrant. Stir in minced garlic and tomato paste, cooking for 1 minute until the paste darkens slightly and releases its concentrated flavor.
  3. Add diced potatoes and carrots to your beef skillet dinner, stirring well to coat with oil and aromatics. Pour in beef broth, then sprinkle dried thyme, rosemary, paprika, salt, and pepper over everything.
