Ingredients
  

  • 1 lb ground beef
  • 1 lb pasta (penne or rigatoni works best)
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 eggs
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup beef broth
  • 2 cups fresh spinach

Method
 

  1. Preheat your oven to 375°F and cook pasta according to package directions until al dente, then drain and set aside. Reserve the pot for browning meat.
  2. Heat olive oil in a large pot over medium-high heat, then add diced onion and minced garlic, cooking until softened and fragrant, about 3 minutes total.
  3. Add ground beef to the pot and cook until browned, breaking it into small pieces as it cooks, approximately 6-8 minutes until no pink remains. Drain excess fat if needed.
  4. Stir in marinara sauce, beef broth, Italian seasoning, salt, and pepper, then simmer 5 minutes while you prepare the cheese mixture.
  5. In a large bowl, whisk together ricotta cheese, 1½ cups mozzarella, parmesan cheese, eggs, and fresh spinach until well combined. This cheese filling creates the creamy layers throughout your cozy soccer night pasta bake recipe.
