  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 3 cloves garlic, minced

  • 1 cup beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp fresh parsley

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Dice your onion and mince garlic, then add both to the hot pan and cook until fragrant, about 2 minutes.
  2. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks for about 5-7 minutes. Drain excess fat if necessary before proceeding.
