  • 1 cup pumpkin puree (pure pumpkin, not pie filling)
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 12 fresh sage leaves
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes
  • 2 tbsp olive oil
  • 1/4 cup pine nuts, toasted

Method
 

  1. Bring a large pot of salted water to a boil and add your pasta. Cook according to package directions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining—this starchy water helps the sauce cling to the noodles beautifully.
  2. While the pasta cooks, heat olive oil and butter in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, stirring constantly to prevent browning.
  3. Tear the sage leaves roughly and add them to the garlic, cooking for another 30 seconds to release their essential oils. This step awakens the herbal flavors that define creamy silky pumpkin sage pasta.
