Ingredients
  

  • 1.5 lb chicken pieces
  • 3 cups broccoli florets
  • 2 cups butternut squash cubed
  • 1 medium red bell pepper
  • 1 medium onion
  • 3 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp ginger
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 2 tsp cornstarch
  • 1 tsp thyme
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Cut chicken into uniform pieces so everything cooks at the same rate within five to seven minutes total.
  2. Add chicken and season generously with salt and pepper. Cook for 6-7 minutes until the outside is golden and cooked through, stirring occasionally.
  3. Remove chicken to a plate and add diced onion and butternut squash to the skillet. Sauté for 4 minutes until the squash begins softening and the onion turns translucent.
  4. Stir in minced garlic and ginger, cooking for 30 seconds until fragrant. Add broccoli florets and red bell pepper next, stirring constantly for two minutes.
