  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1/4 tsp red pepper flakes
  • 2 tbsp fresh sage, chopped
  • 1 tbsp olive oil
  • 1/2 cup vegetable broth

Method
 

  1. Bring a large pot of salted water to a rolling boil. Add penne pasta and cook 8-10 minutes until al dente, then drain and set aside. Reserve 1 cup of pasta water for adjusting sauce consistency later.
  2. While pasta cooks, melt butter with olive oil in a large skillet over medium heat. Add minced garlic and sauté 2-3 minutes until fragrant, stirring constantly to prevent browning and ensure even cooking.
  3. Stir in the pumpkin puree and vegetable broth, whisking until completely smooth. Cook 3 minutes while stirring occasionally, allowing flavors to meld and the pumpkin to warm through evenly.
