  • 1 lb chicken breast, cut into bite-sized pieces
  • 12 oz pasta (penne or fettuccine recommended)
  • 4 tbsp butter
  • 6 cloves garlic, minced
  • 1 cup pesto (store-bought or homemade)
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil
  • 2 tbsp lemon juice
  • 1/4 cup pine nuts
  • 4 cups chicken broth

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper, then cook for 6-7 minutes until golden on all sides, stirring occasionally. Remove chicken to a plate and set aside for later.
  2. In the same skillet, melt butter over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant, stirring constantly to prevent burning and develop aromatic flavors.
  3. Pour in chicken broth and bring to a gentle simmer. Add the pesto and stir thoroughly, combining it with the buttery garlic base for approximately 2 minutes to ensure even distribution.
  4. Return the chicken to the skillet and stir in heavy cream. Allow this garlicky buttery pesto chicken pasta sauce to simmer for 3-4 minutes until slightly thickened and chicken is heated through completely.
